My asparagus pan with meatballs and creamy cheddar hollandaise is a simple favorite recipe with a wow effect and in 40 minutes!
Ingredients for the meatballs
Form 12 meatballs from minced meat, mustard, tomato paste, egg, salt and pepper.
500 g beef meat meat, 1 TL mustard, 1 egg, Salt and pepper, 1 TL tomato paste
Peel white asparagus. Cut the green and white asparagus into small pieces, removing the woody ends.
200 g of white asparagus, 200 g of green asparagus
Heat the oil in a pan and fry the meatballs vigorously from both sides for about 10 minutes, then remove it.

Heat some oil in the pan and fry the green and white asparagus for 10 minutes, then remove.
Mix the hollandaise sauce, 50 ml of water, cheddar and parsley in the pan. When the cheese has melted, add meatballs and asparagus and let everything simmer for 5 minutes over medium heat.
300 g of Hollandaise sauce, 50 g grated cheddar, 2 tablespoons of chopped parsley

3 tips for the best asparagus pan
- Fry the meatballs crispy. First the meatballs are fried and then the asparagus comes into the roasting fat. This provides an extra-Röstaroma in the pan.
- Don’t fry asparagus too long. A good guideline, if you break up green and white asparagus, are 10 minutes. The white asparagus then has a little bit. If you like, you can cook the white asparagus and only then put it in the pan.
- Put cheddar in the sauce. Classic hollandaise sauce is already delicious, but with Cheddar it becomes a real taste shammer! Simply put the cheese in the sauce and let it melt, that makes it even creamier and spicy.
