Budapest chewing cucumbers

 

Budapest chewing cucumbers are a prime example of how a aromatic and saturative dish is created from a few, down -to -earth ingredients. Especially in summer, when the yellow chewing cucumbers have season, it becomes a real treat. The interaction of lush cucumbers, mature tomatoes, peppers and spicy bacon ensures a colorful mixture on the plate. The noble -sweet paprika brings a pleasant depth, while fresh herbs and a blob of sour cream finally ensure freshness and creaminess. This dish brings hearty taste and bright colors to the table – ideal if you want to conjure up a varied meal with little effort. Fresh bread or boiled potatoes go perfectly.

We need these ingredients …

  • 1 kg yellow cucumber
  • 2 red paprika.
  • 4 onions
  • 250 g tomatoes
  • 100 g of mixed bacon
  • 20 g lard
  • 4 tablespoons of noble-sweet peppers
  • 1/8 liter broth
  • sharp pepper
  • Salt
  • some borage
  • 1/2 BUND Petersilie
  • 2 eating spoons thick acid cream

And so it is done …

  1. Halve the peeled cucumbers and strain the seeds with a spoon.
  2. Cut the cucumber halves into 3 cm thick slices and halve them again.
  3. Remove halved paprika by stem base and seed strands, wash and cut them into strips.
  4. Cut the onions into rings, skinned tomatoes into quarters.
  5. Leave the bacon cut into fine cubes, add the lard and fry the onions in it until translucent.
  6. Dust with noble-sweet peppers.
  7. Pour in the meat broth while stirring, bring to the boil and add cucumbers, peppers and tomatoes.
  8. Cover the vegetables for 10 minutes.
  9. Then season with a sharp pepper and salt.
  10. Sprinkle with the small -chopped herbs and give the sour cream over it. It is only stirred at the table.
