The classic recipe for the currant meringue cake consists of:
1 egg, 250g flour, 175g butter, 1 pinch of salt and 80g sugar.
First create the shortcrust pastry by separating the egg and mixing the yolk, sugar, flour, salt, sugar and butter until smooth. Wrapped in cling film, the dough should rest in the fridge for about 30 minutes. In that time you can finish beating the meringue.
If you have never made a meringue cake yourself, you should definitely try it. Danger! The cake tastes dangerously delicious!
Meringue Recipe:
4 x egg whites, 160g vanilla sugar, 100g ground almonds, 50g cornstarch.
Mix the 4 egg whites with the egg white that is left over from the shortcrust pastry, the sugar and the vanilla. Beat until you get the desired whipped cream. Only then carefully fold in the ground almonds and cornstarch. Finally add the washed and dried currants and mix well.
