Quark is perfect for many cakes, dips, desserts and also as breakfast. You can easily make vegan quark yourself, it’s not difficult. You can use different kinds. Try it.
Replacing quark vegan is not always easy, but not impossible. In fact, it’s amazingly simple. You only need a few tools, 2 ingredients and a little patience.
Filter right
Quark must drain really well. It should be sour and firm. This works best if you use cheesecloth or a (really) clean tea towel. The cloth must be porous enough to allow the liquid to drip off. Otherwise your curd won’t set.
If you don’t have a cloth handy, a classic paper coffee filter will do.

Which yogurt?
We use soy yoghurt for our recipe. But you can also use other types of plant-based yoghurt, such as coconut yoghurt or almond yoghurt, without any problems. Note the different tastes of your own, because your quark will also have this afterwards.

Vegan cream quark
Your vegan quark substitute will become firmer the longer you let it drain. Squeezing vigorously will also ensure that any remaining moisture is removed. If you want creamy quark, add some vegan cream at the end and mix well.

Homemade vegan quark

- 500 G soy yoghurt, natural
- 1 tsp lemon juice
- Place a fine-mesh strainer in a saucepan or bowl. Make sure there is enough space between the strainer and the bottom. Line it with a cheesecloth or clean dish towel.

Mix the soy yoghurt well with the lemon juice and put everything together in the cloth. Cover and let the liquid drain in the fridge overnight.
- The next day you squeeze the cloth together with the soy curd well again.
- Fill the vegan quark into a sterilized glass jar or use it immediately.
