Low carb spring salad with asparagus, radish & burrata

This spring salad was a spontaneous idea when I was looking for something quickly for dinner. But then he was so tasty that I just prepared him twice and now finally photographed.

The main ingredients of the spring salad

Green asparagus

Green asparagus will be available in Germany from April and has season until the end of June. It is low in calories and brings a pleasant nutty note to the spring salad.

Can I leave out the wild garlic?

If you don’t find a wild garlic or just don’t like it, you can also simply take basilic pump or if it is easier, green pesto.

Can I also take white asparagus?

Yes, you can also take white, cooked asparagus.

Can I replace the Burrata?

Sure, you can also use mozzarella or chicken pieces.

Can I use the walnut oil?

You can also use olive oil or other cold -pressed oil of your choice. However, I think that the taste of walnut oil* is incredibly well complemented.

How many portions are it?

I wanted to make the spring salad for two portions, but the salad was for three. Depending on the hunger, you can eat more or less and serve to do it individually.
