The colorful strawberry variegato ice cream is a delicious dessert that is suitable both to finish a meal and as a snack. This preparation is perfect even if you want to add a refined touch to a dinner or a buffet. Serve in portion cups and decorate with diced fresh fruit. Making homemade ice cream without an ice cream maker is easy, but takes a long time to cool. Just freeze the ice cream mass and make sure to mix it every 30 minutes for about 5 hours to avoid those pesky ice crystals. Ingredients:

  • 350 ml fresh cream
  • 250ml milk
  • 200 grams of sugar 200
  • 500g fresh strawberries
  • 1/2 organic lemon with zest

Preparation:

Wash and trim the strawberries, then cut into small pieces. Put 350 g strawberries, 100 g sugar and the grated lemon zest in a saucepan. Cook for 15 minutes over medium heat. Let cool and then puree half of the sauce.

Put the cream, milk and remaining sugar in a saucepan. Bring to the necessary temperature to melt the sugar, allow to cool and pour this mixture into a high-walled container. Place in the freezer for 5 hours, stirring every 30 minutes to break up the ice crystals that form on the surface. After about 2 hours, add half of the sauce, including all the strawberry pieces, to the ice cream and continue with the previous process.   • Beat the egg whites until stiff and mix carefully with the cream, stirring from bottom to top.
  • Add the strawberries with their sauce to the mixture and mix gently, then divide into molds or glasses and place in the freezer for at least 2 hours.
