Where does the egg coffee come from?
It is not for nothing that this coffee is also called Vietnamese egg coffee “cà phê trúng”. Because this was offered in Hanoi for the first time in the 1940s by bartender Nguyen Van Giang. At that time, the Indochina War was raging in Vietnam and milk and cream were in short supply. On the other hand, eggs were plentiful and the resourceful bartender simply replaced the milk in the coffee with eggs, or to be more precise, with egg yolks. A simple but ingenious idea that became a success.

Interestingly, there is another North Frisian variant of egg coffee, the so-called Dithmarscher egg coffee. This comes from the region of the same name on the Schleswig-Holstein North Sea coast and was already prepared and drunk at grandparents’ time.
Is egg coffee healthy?
Basically, you could say that egg coffee is a healthy pick-me-up. Of course, you shouldn’t overdo this, as with many other things, but only enjoy it in moderation. Above all, people with chronic health problems, high cholesterol or high blood pressure should be very careful when consuming. On the other hand, such a coffee is very suitable for people with lactose intolerance or for ketarians. The enrichment of the coffee with egg yolk brings a lot of protein and important vitamins and minerals with it. In addition, the egg yolk offers an excellent combination of fatty acids. According to scientists, the high content of lecithin can even lead to a reduction in LDL cholesterol levels.

Classic Vietnamese egg coffee recipe

Prepare Vietnamese egg coffee yourself
The ingredients:
(for two cups of coffee)
- 2 egg yolks
- 2 cups of coffee, freshly brewed
- 1 tbsp honey (alternatively: 2 tbsp sugar/stevia, maple syrup, etc.)
- 2 tablespoons milk or cream (optional)
- 40 ml condensed milk (optional)
- 2 capsule cardamom (optional)
- alternatively: a pinch of vanilla
- Cocoa for sprinkling (optional)
The preparation:
While the coffee is brewing, in a mixing bowl, combine the egg yolks, milk, heavy cream, sweetener, and spices of your choice. Beat everything with the whisk for a few minutes until you get an even, creamy consistency. Then distribute them in the coffee cups and then pour the coffee over them. The light egg foam rises from the floor and lies nicely on the coffee. You can then sprinkle it with cocoa and sip the egg coffee with relish.
