Drive to the countryside by car or bike and go for a long walk. You will be amazed at how wonderful the air smells of elderflowers. Look for trees and bushes that are full of white flowers and check them out first! Only pick those that are fully open. Half-open or faded flowers are not so well suited for your project. Remember that you need at least 40-50 umbels to get at least 1 liter of syrup. It’s always better if you use a tool. In that case, you can cut the delicate and aromatic flowers from the tree with scissors. Gather the flowers in a basket, being careful not to crush them. When you are at home, place the fresh blossoms on a clean cloth and then prepare an elderflower syrup. Danger! You must not wash elderflowers, otherwise you lose too much of the precious aroma.
