Try this easy recipe for raspberry tiramisu in a jar
Ingredients for 2 servings:
- 2 egg yolks
- 2 1/2 tablespoons sugar
- 1/2 teaspoon vanilla extract
- 1 cup mascarpone, at room temperature
- 2/3 cup whipping cream
- 5-6 ladyfingers
- 1/4 cup cold brew coffee
- 1 1/4 cups fresh raspberries
- Cocoa powder and/or raspberry sugar for dusting

Preparation:
In a heatproof bowl, whisk together egg yolks and sugar until pale yellow. Set the heatproof bowl over a pot of simmering water. Make sure the water doesn’t touch the bottom of the bowl. Cook over low heat, stirring and whisking constantly, until the mixture thickens and forms a loop on the surface when you lift the whisk (5-7 minutes). Remove from the stove and let cool down a bit.
