If you like Moroccan cuisine, you don’t need an explanation of how delicious and healthy couscous is. It is usually made from durum wheat semolina, but in some areas it can also be made from millet or barley. In order to be able to prepare delicious, healthy and varied dishes, you first need to cook the couscous separately. The recipes with couscous are not limited to the preparation of vegetarian patties or meatballs without eggs. You can still conjure up salads, soups or baked goods from the nutritious couscous.

ingredients:
160g couscous,
480ml boiling water,
1 red onion,
5 dried apricots,
35g pecans,
20g fresh parsley,
35g chickpea flour,
2 tablespoons olive oil,
1 tablespoon lemon juice,
1 tsp salt,
1-2 tsp turmeric,
2 tsp black cumin,
1/4 teaspoon cinnamon,
1/4 teaspoon cayenne pepper,
1 pinch nutmeg,
Black pepper
The cooked couscous is given a little oil and left aside to cool completely

Soak the couscous overnight, swell at a low temperature or bring to the boil briefly (see basic couscous cooking recipe) and then allow to cool. Grind the spices and mix together. Ingredients:
1 tablespoon rapeseed oil,
1 large onion,
2 cloves of garlic,
1 zucchini,
250g cooked or soaked couscous or soaked overnight,
400ml vegetable broth,
2 hands full of fresh salad mix,
400g chickpeas (canned or pre-cooked),
about 50g peas,
approx. 50g braised carrot,
50g corn,
1 tablespoon ground flaxseed
1 tablespoon garam masala
50 g dry bun,
Pinch of salt,
diced red peppers.
Couscous, bulgur or millet can first be washed well, salted and set aside
With fresh salad and wild rice, your creation will taste fresh, healthy and very tasty

Here you should first chop or grate all the vegetables. The spices also come together in one mug. Everything but the lettuce can be mixed together and mashed with your hands. When you have the meatball consistency, you can shape the vegan meatballs into the desired shape. Our recommendation would be to bake the meatballs in the oven, although they are pan-fried. Both are fine, only the oven is a bit healthier than the pan. If you want, you can also fry the meatballs, but that’s where the topic of healthy eating ends for us.

Summer recipe for vegetarian patties with zucchini and mint
ingredients:
200g wholemeal couscous and red lentils mixed,
rinsed and soaked for 2-3 hours
150g grated Parmesan,
a large zucchini,
1 red onion,
pinch of freshly grated ginger,
1/2 bunch fresh mint,
1 packet of saffron,
Salt,
Pepper,
olive oil

These vegetarian patties taste fantastic thanks to the large amount of Parmesan cheese. The recipe is super easy to prepare and you can take the original patties with you on every trip.
Well cooled, the pre-cooked couscous is a great basis (or side dish) for many dishes
Pre-cook the lentils and couscous and grate the cheese into small pieces. Cut the vegetables into small pieces and prepare the spices. The grated zucchini releases a lot of liquid and should be drained before baking. Gently knead everything into a dough with wet hands and leave to rest for a few minutes. If you want a crispy crust, you can dust each patty with a little flour or cornmeal before baking or frying.
