Make cherry ice cream yourself – recipe
Ingredients:
- 3 cups pitted sweet cherries, quartered
- 1 cup granulated sugar, divided in two
- 1 1/2 cups whole milk
- 1 1/2 cups whipping cream
- 4 large egg yolks
- 2 teaspoons vanilla extract
- 85 g semi-sweet chocolate, finely chopped
- 2 teaspoons canola oil
Homemade cherry flavored ice cream
Preparation:
In a small saucepan, stir together the cherries and 1/4 cup sugar. Simmer over medium-high heat until the sugar dissolves and the sauce has thickened, about 8 minutes. Let cool down.
Place a medium bowl over a large container of ice water.
In a medium saucepan over medium-high heat, heat the milk, heavy cream, and 1/2 cup sugar, stirring occasionally, until steam comes out and the liquid is hot (80°C), about 5 minutes.
While the milk mixture is cooking, in a separate bowl, whisk the 1 cup or so of the hot milk mixture into the yolks to temper them. Then slowly stir the tempered yolk mixture back into the remaining hot milk mixture. Continue cooking the pudding mixture over medium-high heat until very hot but not boiling (80-85°C). Immediately pour the mix into a bowl set in an ice bath and let cool, stirring occasionally, about 10 minutes. Remove the pudding mix from the ice bath. Stir in vanilla extract. Cover tightly with plastic wrap and refrigerate until very cold (4°C), at least 4 hours and up to 24 hours.

A few minutes before whipping the ice cream, place the semi-sweet chocolate in a medium heatproof bowl. Set the bowl over a saucepan of barely boiling water; Heat the mixture until the chocolate has melted and stir with a whisk until smooth. Stir in the oil and place in a ziplock bag; put aside.
Pour the mixture into the ice cream container and stir until it has the consistency of thick whipped cream. Fold in the cherry mixture. Cut the corner of the ziplock bag containing the chocolate and, with the machine running, slowly drizzle the chocolate into the cherry ice cream. After adding the chocolate, keep stirring until the mixture looks like soft serve.
Place the cherry ice cream in an airtight container, cover and freeze until set, about 3 hours.
