You need these ingredients for the dough
- 280 grams of flour,
- 160 grams of sugar,
- 125 g butter (let it thaw at room temperature for an hour),
- 1 medium egg.
- The zest of half a lemon
- 1 teaspoon Baking powder,
- 1 pinch of salt,
- 1 pack of vanilla.
Ingredients for the fruit filling
- 250 grams of strawberries,
- 120 grams of sugar,
- The juice of half a lemon.
For garnish you could use the following
- 100 grams of strawberries,
- 50 gr of slivered almonds.

Cook fruit filling
Start preparing the strawberry cake from the tin by chopping the fruit. Put this in a pan with a bit of sugar and add the lemon juice. Stir on medium-high until the mixture has become quite thick. Let the jam cool down.
The usual white flour can be replaced with whole grain or other healthy alternatives!
Prepare the dough
In another bowl, you should mix together the flour, baking powder, vanilla and salt. Add the sugar, egg, butter and grated lemon zest. Mix it all together until the batter looks uniform.
You could use a healthier white sugar alternative! Consider muscovado or coconut sugar!
Conjure up the different layers of strawberry cake
You should use a suitable baking sheet to bake the dough. Grease this with butter so the cake doesn’t stick to it. Alternatively, you could line the mold with parchment paper. Separate 2/3 thirds of the dough and spread it evenly on the tray. Pour the finished fruit filling on top. With the help of a spatula you can smooth this layer.
