Refined Christmas cake & Gugl with avocado and pistachios
ingredients
(The ingredients are enough for a loaf pan or 18 mini balls For both, you just double the amounts.)
- 60 g pistachio nuts
- 1 lime (organic)
- 1 ripe avocado
- 250 g soft butter + butter for greasing the mold
- 200 g of sugar
- salt
- 4 eggs
- 350 g flour
- 1 packet of tartar baking powder
- 50 ml coconut milk
- 1 tbsp powdered sugar
- White couverture
- Loaf pan (approx. 30 cm long)
- Minigugl forms
- Hand mixer
And this is how it works: Refined Christmas cake or miniature glass
- Coarsely chop 50 g of the pistachios.
- Wash the lime, halve it and squeeze out about 3 tablespoons of juice.
- Halve, core and peel the avocado.
- Whisk the avocado with butter, sugar and a pinch of salt with a hand mixer for 8 minutes to a creamy mass.
- Add the eggs, flour, roughly chopped pistachios, some grated lime zest, baking powder, coconut milk and lime juice and stir all the ingredients into a smooth batter.
- Grease the loaf pan or mini-jelly pan well and add the batter.
- Bake the Christmas cake in a preheated oven at 180 degrees top / bottom heat for one hour. You only leave the miniature glass in the oven for 8-10 minutes.
- Let the gugl / cake cool in the tin for about 10 minutes before you throw them onto a wire rack and let cool down completely.
- Coarsely chop the remaining pistachios.
- Garnish the cake with powdered sugar and chopped pistachios before serving. Or melt some white couverture and decorate the Gugl.
tip: If the cake gets very dark, cover it with baking paper for the last 15-20 minutes in the oven.
