Ingredients for the Hollandaise sauce

  • Peel the asparagus and cut off the ends narrowly. Bring the water to the boil in a saucepan. Add asparagus, sugar and 1 teaspoon of salt and let the asparagus pull over for about 12 minutes over low heat.

  • Season salmon fillets with salt and pepper. Heat the oil in a pan and fry the salmon over medium heat.

  • Put the egg yolks in a high container and whisk with the fork. Pour in the melted butter, slowly moving the blender up and down. Season the hollandaise sauce with salt, pepper, lemon juice and mustard.

  • Serve asparagus with salmon and sauce hollandaise.

Asparagus and salmon are really easy to prepare. In addition a creamy hollandaise sauce – just incredibly good! That is why that dish is also one of my favorite asparagus recipes. Not least because thanks to these 5 simple tips, vegetables and fish come perfectly on the plate.

  1. Refine the cooking water for the asparagus with a little sugar. This tickles the asparagus aroma, so that the spring vegetables taste really intense.
