Bear garlic is a plant that grows wild in the forest. It is called even wild garlic or forest garlic. Its green leaves have a mild garlic taste. Be very careful when collecting the leaves, because wild garlic has two doppelgangers that contain toxic ingredients. These are the autumn timeless and lily of the valley. The leaves of the three wild plants look confusingly similar, so you have to learn to recognize the wild garlic. In addition to the typical garlic smell, every wild garlic leaf grows out of a stem and all leaves hang down. According to these characteristics, the forest garlic can be easily recognized from the other wild plants. We have already shown in another article how to prepare the appetizing wild garlic pesto. Today it is the turn of the wild garlic soup! You can prepare them quickly and enjoy the fine, slightly spicy taste. The wild garlic soup is full of healthy ingredients. You need 1 onion, 3 medium -sized potatoes, 250 g wild garlic, 1 tablespoon of butter, 200 g cream cheese, 1 liter vegetable broth, salt and pepper for seasoning. Peel the onion and potatoes and cut them small. In a saucepan you first have to steam the onion until glassy, ​​then add the potato pieces and fry briefly. Then the vegetable broth is added. Let the mix simmer for about 15 minutes. Then put the wild garlic and cream cheese in the soup and let everything simmer for 5 minutes on low heat. Then taste the wild garlic soup with salt and pepper. Enjoy this spicy specialty with toast bread right away!
