Rhubarb is a healthy spring vegetable
The main rhubarb season lasts from April to mid-June. The low-calorie vegetable is just as popular in Germany as asparagus and is used a lot in the kitchen. Now you can buy it fresh at every vegetable market. Its greenish to slightly reddish stems are immediately noticeable and cannot be confused. It contains few calories, but many vitamins such as vitamin C, vitamin K and the minerals potassium and calcium. These ingredients are important for the function of the nerves and for all muscle movements. The reddish color of the stalks comes from the pigments they contain (anthocyanins), which also have health-promoting properties. The slightly sour taste of rhubarb is due to the apple and citric acid it contains. The amount of oxalic acid contained in fresh vegetables is low. Oxalic acid can cause gastrointestinal problems in sensitive people and lead to the formation of kidney stones. The oxalic acid content in the rhubarb leaves increases sharply from mid-June. For this reason, it is not recommended to harvest the vegetable later.

Now we come to the tried and tested recipe from grandma’s cookbook. We prepare this delicious rhubarb cake on the baking tray. Below in the video you can see another springform pan recipe.
necessary Ingredients for baking rhubarb pie: 800g fresh rhubarb stalks, 2 sachets of vanilla sugar, 250g softened butter, 220g sugar, 100ml milk, 4 eggs, 400g wheat flour, 2 teaspoons baking powder, a little butter for greasing the baking tray, a little icing sugar for sprinkling before serving.
Bake rhubarb cake on the tray and conjure up a delicious dessert!
How to do it! Easy preparation in 4 steps
- Wash the rhubarb stalks, peel and cut into 2 cm pieces. Place in a bowl, mix with vanilla sugar and set aside.
- Take a baking sheet (e.g. 37 X 44 cm) and grease it. Preheat the oven to 180°C. Cream the softened butter with the sugar and salt in a bowl with a whisk.
- Add the eggs one at a time and beat on the highest setting of the hand mixer. Mix flour with baking powder and add. Then stir the milk into the batter. Carefully place the dough on the greased baking sheet and spread evenly.
- Spread the rhubarb pieces on top and bake in the preheated oven for about 30 minutes. Then take it out and let it cool down. Depending on your taste, you can sprinkle the finished baked rhubarb cake with a little powdered sugar before serving.
You can get about 20 pieces of rhubarb pie from a tray.
