When you hear a bee sting, you don’t exactly associate it with a cake, do you? Yes, but the delicious pastry bears this name on the occasion of a historical event that is said to have taken place near Koblenz more than 5 centuries ago. According to an old legend, a conflict arose in 1474 between two towns – Andernach and Linz on the banks of the Rhine. An important source of money was taken from the people of Linz by the Emperor, namely the customs duty for shipping on the Rhine. The people of Andernach benefited from this and were happy about the new financial income. Since the people of Linz were very angry, they decided to attack the neighboring town at dawn. But their plan failed thanks to two young baker’s apprentices. Fränzje and Döres were in front of Andernach’s city wall early in the morning when they heard the noise. Actually, you just wanted to snack on some honey from the beehives there.

For the classic bee sting recipe you need the following ingredients:

  • For the yeast dough: 250 ml lukewarm milk, 70 g sugar, 500 g wheat flour, 70 g softened butter, 1 medium-sized egg, pinch of salt, 1 cube of fresh yeast.
  • For the almond crust: 3 tbsp cream, 150 g butter, 100 g sugar, 200 g almonds (preferably flaked almonds), 2 tbsp honey.
  • For the vanilla cream: 2 packets of vanilla pudding powder, 500 g milk, 400 g cream (half liquid, the other 200 g whipped until stiff), 2 packets of cream, 80 g sugar.

If you have a sheet that is too big, then you will need to double the ingredients.

Crumble the fresh yeast and place in a mug of lukewarm milk. Plus a teaspoon of sugar. Stir with a spoon until the yeast and sugar have dissolved. Then put the flour in a deep bowl, make a hollow in the center and pour the yeast-milk mixture there. Add the remaining sugar and mix again. Then cover the bowl with a cloth and let the dough rise in a warm place for 15 minutes.

In a small bowl, whisk together a medium egg, a pinch of salt, and softened butter. Add this mixture to the yeast dough and knead everything in the food processor. Then cover again with a cloth and leave to rise in a warm place for about 30 minutes. Then knead the dough again and roll it out on a baking sheet lined with baking paper. Then let it rest for another 20 minutes.

In the meantime, prepare the mixture for the almond-sugar crust and preheat the oven to 190 °C top and bottom heat. First melt the butter in a pan, add the cream, sugar and honey, bring to the boil and remove from the heat. Add the flaked almonds to this mixture and allow to cool slightly. Then spread it on the yeast dough, smooth it out and put the bee sting cake in the preheated oven. Bake for 25 minutes until a golden crust forms on top.

While the cake is in the oven, you can make the custard filling. Mix the ingredients for the filling described above and bring to the boil on the stove. Then allow to cool until lukewarm and stir constantly. So no skin forms!
