Creamy Wild garlic pasta with Parmesan and pine nuts is the perfect spring pasta dish.

With freshly picked wild garlic, a little cream, parmesan and pine nuts, you can cook this delicious pasta in just a few minutes.

The wild garlic pasta with parmesan and pine nuts is:

What ingredients do I need to prepare wild garlic pasta?

For my super simple recipe you only need a few simple ingredients, which you most likely have at home and don’t have to buy separately. You need:

  • 50 g pine nuts
  • 2 onions
  • 2 cloves of garlic
  • 3 tbsp olive oil
  • 200 g wild garlic
  • 200 ml cream
  • 200 ml vegetable broth
  • 1 tsp salt
  • ½ tsp pepper
  • 80-100g Parmesan
  • 500g spaghetti

In a pan, spaghetti with wild garlic in a creamy cream sauce.

How do I make wild garlic pasta with parmesan and pine nuts?

Preparing my wild garlic pasta is child’s play and also super quick. The delicious, creamy pasta is on the dining table in under 30 minutes.

First, peel and finely chop the onion and garlic. Grate or grate the Parmesan. Wash the wild garlic and drain well.

Heat a pan and fry the pine nuts in it, without adding any oil, until golden brown.

Remove the pine nuts from the pan and set aside.

At the same time, bring a pot of salted water to the boil for the spaghetti. When the water is boiling, add the pasta and cook according to the package instructions.

In the same pan, add the olive oil, add the onion and garlic and sauté.

Tip: If necessary, let the pan cool down a little beforehand.

Then deglaze with the cream and broth, add approx. 80 g of Parmesan and stir in, season with salt and pepper and season to taste.

Tip: depending on which broth you use, you may need a little more salt and pepper than I specified.

Now add a ladle of the pasta water to the pan.

Then the cooked noodles are added to the pan and stirred in.

To serve, add the pine nuts and some grated Parmesan over your wild garlic pasta.

How do I store fresh wild garlic?

You should use fresh wild garlic, whether you picked it yourself or bought it in the supermarket, within three days. To store it in the refrigerator, it is best to roll the wild garlic in damp kitchen paper and place it in the vegetable compartment.

You can also freeze fresh wild garlic. It’s best to portion the wild garlic and put it in a freezer bag. Close the freezer bag tightly and place it in the freezer.

If you have the opportunity, you can also vacuum seal the wild garlic so that it stays fresh longer and is guaranteed not to get freezer burn.

Wild garlic also tastes delicious as wild garlic butter. You can see how to make your own herb butter in my post on how to make your own herb butter. Instead of the herbs, simply add finely chopped wild garlic to the butter.
