225g butter
110g Brown sugar
1 tsp pure vanilla extract
240g oatmeal
0.5 tsp ground cinnamon
0.25 teaspoons kosher salt
180g dark chocolate chips
190g chunky peanut butter


Line a 20×20 cm baking pan with baking paper and set aside.
In a medium saucepan, warm butter, brown sugar, and vanilla extract over low heat until butter is melted and sugar is dissolved.
Add the oats, cinnamon and salt and cook, stirring constantly, for 4-5 minutes.
Pour half of the oat mixture into the prepared pan, spread evenly and press firmly.
In a small microwave-safe bowl, combine chocolate chips and peanut butter. Microwave on high in 40-second intervals, stirring occasionally, until mixture is melted and fully combined.
Pour ¾ of the chocolate mixture over the pressed oats, reserving about ¼ cup for garnish. Top with remaining oat mixture and drizzle with reserved chocolate mixture.
