Ingredients for ant cakes from the tray:

I think the recipe for ant cakes on a tray originally comes from the former GDR. As is well known, the people here were not exactly wealthy, so they often had to make do with little. Nevertheless, delicious treats were created during this time. Many of these recipes only require the simplest ingredients, just like this ant sheet cake – by the way, I bake it without any eggnog.

  • 150g butter
  • 3 eggs
  • 140g sugar
  • 1 tsp vanilla paste
  • 180g flour
  • 2 tsp cream of tartar baking powder
  • 70 g chocolate sprinkles

Suitable shape for ant cakes from a tray:

The quantities given are sufficient for half a baking tray or a round springform pan of 26 cm. I like to use this non-stick brownie pan. You can also double the ingredients and bake an entire baking sheet of ant cakes. This is then gone in no time, for example at school parties or family celebrations.

Ant cake from the tray – made quickly and easily:

Preparing ant cake is very easy and corresponds exactly to my cake plan! Because in my bakery things should always be quick and uncomplicated. Maybe you also know the classic sponge cake from my other recipe for ant cake from the springform pan? Both versions are super juicy and fluffy. This is how the preparation for the tray works:

  • First you have to beat the soft butter with the eggs and the two types of sugar until fluffy. This only takes a few minutes. And this makes the cake particularly soft.
  • Then mix the flour and baking powder and stir both into the egg mixture. Finally, just fold in the chocolate sprinkles and the dough is ready.
  • Spread the fine mixture on a small baking tray and bake the whole thing for 25-30 minutes at 170 degrees top and bottom heat.

That’s why I only bake with cream of tartar baking powder

Don’t be surprised that the dough is quite flat when spread. When baking, it rises beautifully thanks to the well-mixed eggs and cream of tartar baking powder. This special type of baking powder is a natural leavening agent made from tartaric acid, baking soda and starch. In contrast to conventional baking powder, it has no phosphate and is gluten-free, lactose-free and vegan.

Ant cake – this is how you can modify it:

There are also ant cake recipes that use eggnog. This brings a delicious taste of its own, but also alcohol. Ant cake with eggnog is therefore not suitable for children or people who cannot tolerate/consume alcohol.

And I’ve never drunk eggnog in my life, so I don’t need to bake with it ????

Modify You can also take ant cakes from the tray with you

  • a sweet icing made from lemon juice,
  • Powdered sugar and cinnamon
  • or with a chocolate coating.
  • A few chopped nuts in the dough provide an extra bite.

Storing ant cakes from the tray – this is how it works:

Cut into pieces and packed in an airtight container, homemade ant cake from the tray will last for around a week in the fridge. Portioned in this way, you can easily eat it on the go or give it to your kids to take to school. If you want to store the cake for longer, you can freeze it after it has cooled completely and then bake it in the oven for a few minutes if you have the opportunity. So you always have fresh baking enjoyment in the house!

I hope you have fun imitating and enjoying!
