Glass noodle salad is a delicious and healthy salad that is perfect for a summer barbecue party or even a simple family meal.

A slightly different alternative to grilling, after-work cooking or meal prep is this delicious Asian-inspired recipe for a glass noodle salad.

Glass noodles are always ready in a flash because you just have to pour hot water over them and let them steep for a moment. Add some vegetables, meat, a few spices and soy sauce and in no time you have a light and unusual Thai or Asian style salad.

You can enjoy the glass noodle salad hot or cold, as a light lunch, as a side dish or as meal prep for the office, it is perfect in any situation.

Of course, it is also very tasty for vegetarian enjoyment without meat.

What ingredients do I need to make a glass noodle salad?

For my glass noodle salad you need the following ingredients:

  • 3 carrots approx. 280 g
  • 1 red pepper
  • 1 medium onion
  • 2 cloves of garlic
  • 300 g meat (chicken, pork, beef)
  • salt and pepper
  • ½ tsp paprika powder
  • 200 g glass noodles
  • 4 tbsp light soy sauce
  • 1 tsp sambal oelek
  • 3 tbsp oil

How do I make a glass noodle salad?

Preparing the glass noodle salad is very easy and quick.

Preparation:

First you clean the vegetables. Wash the peppers, peel the onion, carrots and garlic.

Then cut the peppers into small cubes. Cut the onion and garlic into fine cubes. Grate the carrot with a coarse grater.

Cut the meat into evenly sized cubes.

Preparation:

Prepare the glass noodles according to the package instructions. My glass noodles are poured with hot water and then left to stand for 4 minutes until they are translucent. I also add a teaspoon of salt. After letting it sit through, drain the noodles and rinse them with cold water so that they don’t stick together.

Now heat a pan with two tablespoons of oil. You can use sunflower oil, safflower oil, or canola oil.

Add the peppers and carrots to the pan and sauté the vegetables for about 2-3 minutes. The vegetables should not be too soft and should still have some bite. Season the vegetables with a little salt, pepper and paprika powder.

Remove the vegetables from the pan and set them aside.

Now add another tablespoon of oil to the pan and fry the meat in it. Add the onion and garlic and sauté them with the meat. Here too, season with salt, pepper and a little paprika powder.

Then put the sautéed vegetables and the pre-cooked glass noodles back into the pan.

Mix the soy sauce with the sambal oelek and add the mixture to the pan.

Finally, mix all the ingredients together and season the glass noodle salad. Add a little salt or pepper to taste.

Tip: If you like it spicy, you can use more than 1 teaspoon of sambal oelek.

Arranging and serving:

Place the glass noodle salad on a plate or in a bowl and please serve promptly.

Which meat is suitable for the glass noodle salad?

I used shredded chicken thighs for my glass noodle salad. The meat is juicier than, for example, a chicken breast fillet. You can remove the chicken leg yourself with a sharp knife or have your butcher do it for you.

Alternatively, you can prepare the glass noodle salad with any type of meat that you like to eat. You can use turkey, pork, chicken or even beef for this recipe.

  • 3 Carrots approx. 280 g
  • 1 Red pepper

  • 200 G Glass noodles
  • 4 EL Light soy sauce
  • 1 TL Sambal Oelek
  • 3 EL oil
  • Wash the peppers and cut them into small cubes. Peel the carrot and grate it coarsely.
  • Peel the onion and garlic and dice very finely. Cut the meat into cubes.
  • Tip: I used the meat from two chicken thighs. But you can also use chicken breast, turkey breast, pork or beef.
  • Cook the glass noodles according to the package instructions, drain and rinse with cold water.
  • Heat a pan with 2 tablespoons of oil and sauté the peppers and carrots, season with salt, pepper and paprika powder, remove from the pan.
  • Add 1 more tablespoon of oil to the pan, add the meat and fry, season with salt, pepper and paprika powder.
  • Add the onions and garlic and sauté with the meat.
  • Add the sautéed vegetables and glass noodles to the pan.
  • Mix the soy sauce with the sambal oelek and pour over the noodle and vegetable mixture.
  • Mix everything together well.
  • If necessary, season again with a little salt and pepper.

The glass noodles can be enjoyed warm or cold.
