flatbread just do it yourself. The flatbread is the perfect companion for grilling, soups or curries.
You can fill the delicious bread, bake it or enjoy it with various dips.
I’ll show you how you can easily make the perfect bread yourself.
What ingredients do I need for flatbread – make it yourself?
The flatbreads are made from a yeast dough. To do this you need the following ingredients:
- 1/2 cube of yeast
- 1 tsp sugar
- 2 tablespoons oil, sunflower or rapeseed oil
- 300 g flour (wheat flour type 405 or 550) or alternatively spelled flour type 630
- 1 tsp salt
For painting:
- some Milk
- some sesame, if necessary black sesame

How do I make a yeast dough for flatbread?
You can prepare the yeast dough with a food processor such as the Thermomix®, KitchenAid or a similar kitchen aid.
Alternatively, you can knead the dough with the dough hook of the mixer or with your hands.
Preparation with the Thermomix®:
The easiest way to prepare this dough is in the Thermomix® or a similar food processor.
First, put the water with the yeast and sugar in the mixing bowl and heat the mixture for 2 minutes/37°/speed 1.
Then add the salt and oil and sift the flour into the container. Then knead the dough on the kneading setting for 10 minutes to form a smooth dough.
Then pour the dough into a larger bowl and cover it with a clean towel. Let the dough rise in a warm place for 1 hour until the dough has doubled in size.
Tip: I put my yeast dough in the oven, turn on the lamp and turn the temperature to 37°. These are ideal conditions for the yeast dough to rise.
Preparation without a food processor:
First put the water, definitely lukewarm, in a bowl. Add the yeast and sugar and mix everything together lightly. Cover and let the mixture rest for 10 minutes.
Then add the oil and salt and sift in the flour. Knead it into a smooth dough with your hands.
Tip: You can also use the dough hook of the mixer at the beginning and then knead everything until smooth with your hands at the end. A yeast dough should be kneaded for at least 5 minutes.
Then pour the dough into a larger bowl and cover it with a clean towel. Let the dough rise in a warm place for 1 hour until the dough has doubled in size.
Tip: I put my yeast dough in the oven, turn on the lamp and turn the temperature to 37°. These are ideal conditions for the yeast dough to rise.
How is the flatbread formed?
After the rising time, take the dough out of the bowl, knead it again and then form it into 6 equally sized balls.
Tip: You can also form one large flatbread or two half-sized flatbreads from the dough.
Then shape evenly sized flatbreads from the ball using your hands or a rolling pin and place them on a baking tray lined with baking paper.
Using your hands or a rolling pin, shape each ball into a flatbread and place on a baking tray lined with baking paper.
Then use floured fingers to press small depressions into the dough.
Finally, brush the flatbreads with a little milk and sprinkle sesame seeds over the flatbreads. You can use light or dark sesame seeds, whichever you like better.
Let the finished flatbreads rise again for 15-20 minutes.
Meanwhile, preheat the oven to 220° top/bottom heat.
Bake the flatbreads on the middle rack for 8-10 minutes.
After baking, wrap the flatbreads in a kitchen towel so that they become nice and soft.
How long does flatbread last?
The flatbread, like most things made with yeast dough, tastes best when freshly baked.
If you want to store the flatbread, put the flatbread in a food storage box with a lid. This will keep it for 2-3 days before it dries out.
You can then bake the bread at 180° top/bottom heat for about 8 minutes before serving.
Can you freeze flatbread well?
Yes, you can also freeze the flatbread. It’s best to do it immediately after baking, when the flatbread has cooled down.
Place the flatbread in a freezer bag and seal the bag airtight. The flatbread will keep frozen for 3-4 months.
To bake, let the flatbread thaw first and then bake in a preheated oven at 180° top/bottom heat for 8 minutes.
Tip: You can also make your own croutons from leftover flatbread.
What goes well with homemade flatbread?
Mini flatbreads are great to fill with salad and meat. So you have a homemade kebab bag.
You can also dip the flatbread in sauce such as tzatziki or hummus. This is a delicious side dish, especially for grilling in summer.
But the flatbread is also the perfect accompaniment to salads, soups or a curry.

- Place water, sugar and yeast in mixing bowl and mix 2 min/37°/speed 2 for 2 minutes. Add the remaining ingredients, preferably sifting in the flour, and knead the dough for 10 minutes using the kneading pointer.
- Form the dough into a ball and pour it into a bowl, cover and let it rise in a warm place for 1 hour.
Preparation without a food processor:
- Pour the water, definitely lukewarm, into a bowl. Crumble in the yeast and add the sugar. Cover and let the mixture rest for 10 minutes.
- Then add salt and oil and sift in the flour. Knead it into a smooth dough with your hands.
- Tip: You can also use the dough hook of the mixer at the beginning and then knead everything until smooth with your hands at the end. A yeast dough should be kneaded for at least 5 minutes.
- Then pour the dough into a larger bowl and cover with a towel and let it rise in a warm place for 1 hour until the dough has doubled in size.
- Tip: I put my yeast dough in the oven, turn on the light and turn the temperature to 37°. These are ideal conditions for the yeast dough to rise.
- After the rising time, take the dough out of the bowl and shape it into 6 equally sized balls.

- Bake the flatbreads on the middle rack for 8-10 minutes.
- After baking, wrap the flatbreads in a kitchen towel so that they become nice and soft.
- Fill the flatbreads with meat, salad and sauce and enjoy.
Tip: The flatbreads also go well as a side dish with grilled food.
