  • 2-3 EL Protein powder* Vanilla
  • 1 TL vanilla extract* to taste
  • 3 EL food starch
  • 1-2 EL xylitol* or to taste
  • 1 prize Salt
  • In a small bowl, whisk a few tablespoons of the almond milk with the cornstarch until smooth.
  • Pour the remaining almond milk into a saucepan and heat over medium heat. Add xylitol and protein powder and stir until completely dissolved.
  • Before the milk starts to boil, slowly add the cornstarch mixture to the pot, stirring constantly. Turn the heat down.
  • Add the vanilla extract and a pinch of salt and mix everything well.
  • Continue stirring the mixture over low to medium heat until it thickens and has a pudding-like consistency.
  • Pour the pudding into individual bowls and either enjoy warm or let cool in the refrigerator.

If the protein powder already tastes very strongly of vanilla, you can also leave out the vanilla extract.
The other way around, you can also use neutral protein powder and then add more vanilla extract.
