You can also prepare the mashed potatoes and reheat them later in a pot or in the microwave.

If possible, you should prepare the fried onions and ribs fresh.

How long does the dish last?

The dish will keep in the fridge for up to 2 days.

To heat, heat the sauerkraut and the mashed potatoes in a pot.

If the mashed potatoes have become too thick, you can make it creamier again with a little milk.

What ingredients do you need for ribs with sauerkraut and mashed potatoes

  • 4 ribs (stemmed ribs of 250 g each)
  • 1 can of sauerkraut (580 ml)
  • approx. 1kg potatoes, mainly waxy
  • 2 large onions
  • Salt
  • Black pepper
  • 2 pinches of nutmeg

How to make ribs with sauerkraut and mashed potatoes

For the sauerkraut:

Place the sauerkraut in a medium saucepan, add 200 ml water and heat slowly over medium heat.

For the mashed potatoes:

Peel the potatoes and halve or quarter them depending on their size.

Place in a large pot and add enough water to cover the potatoes.
Add 1 teaspoon salt and bring to the boil.

Cook over medium heat until the potatoes are cooked through and tender, about 20 to 25 minutes.

Then pour off the water. Then add the butter, cream (or milk) and nutmeg and puree with a hand mixer until smooth.

This takes about 3 to 4 minutes.

A notice: Don’t worry, it won’t be sticky, it will be really creamy ????

If necessary, season with a little salt.

For the fried onions:

Peel the onions, halve them lengthwise and then cut them crosswise into thin strips.

Heat oil in a pan and add the onions.

Season with 1⁄2 teaspoon salt and 1⁄4 teaspoon black pepper.

Now slowly fry the onions over medium heat.

A notice: Slowly braising the onions can take around 20 minutes. It is therefore advisable to prepare the onions at the same time as the potatoes.

For the ribs:

Heat the oil in a pan and slowly fry the ribs on both sides over medium heat.

A notice: The ribs are already pre-cooked and just need to be heated and they should get a little color very slightly. Alternatively, you can add the ribs to the sauerkraut and heat them together with the sauerkraut.

Arranging and serving:

Distribute a portion of mashed potatoes and sauerkraut on each plate.

Then add one rib each.

Add fried onions on top and serve with a dollop of mustard.
