  • 800 G Tomatoes (= 2 cans, whole or chopped)
  • 1 small bunch spring onions
  • 3 Garlic cloves
  • 1 Red Chili pepper
  • 1 TL Cumin (cumin)
  • salt and pepper
  • 1 EL olive oil
  • 4 Eggs
  • ½ Federation Parsley
  • Open the tomato cans and cut the spring onions, garlic and chili pepper into thin slices.
  • Prepare 1 teaspoon of cumin and mix it with some salt and pepper. Add olive oil to a pan.
  • Briefly fry spring onions, garlic and chili.
  • Add the prepared spice mixture and briefly sauté the spices.
  • Add the tomatoes to the pan, stir everything well and let the tomatoes simmer for 15-20 minutes until they have reduced slightly.
  • Form small wells and crack the eggs directly onto the bed of tomatoes in the pan and let the eggs set until the whites are firm and the yolks are waxy. If you cover the pan or put it in the hot oven (note: only with suitable pans), the eggs will set more quickly.
