For preparing this vegan roast we use Seitan powder. You can get this in well-stocked organic stores or simply online*. But what is Seitan actually?

Ingredients for the vegan roast

  • 50 g onions or shallots
  • 1 small clove of garlic
  • 4 tbsp vegetable oil
  • 50 g natural tofu
  • 100 g chickpeas, cooked
  • 1 tbsp soy sauce + 1.5 tbsp soy sauce to deglaze
  • 1 tsp hot mustard (4 g)
  • 250 g Seitanfix (finished product, available in organic markets)
  • 1 tsp salt
  • 1 tsp vegetable broth powder
  • 1 tsp marjoram, grated
  • 1 teaspoon thyme, grated
  • 190ml water
  • 4 tbsp vegetable frying oil
  • A small Bunch of thyme
  • A few sprigs of rosemary

Tip: Seitan powder is a product that is easy to process, but does not “forgive” much. This means that you should follow the quantities and steps in this recipe very carefully. Because of course we want to have the perfect consistency for our roast. Even small differences in the quantities of ingredients can result in the roast becoming firmer or softer than planned. But don’t worry, if you stick to the quantities above, you’ll have a perfect feast.

Preparation (35 minutes preparation time + 40-45 minutes baking time)

  1. Peel the onions and garlic, chop them and fry them in the pan with 1 tablespoon of oil until golden brown. Puree these ingredients with tofu, chickpeas, 1 tablespoon of soy sauce, miso paste and mustard in a blender until creamy.

  2. Mix Seitanfix/Seitan powder in a bowl with salt, paprika powder, vegetable stock powder, marjoram and thyme. Loosely fold in the previously pureed ingredients.

  3. Add 190 ml cold water to the ingredients and knead a dough. Fold, knead and pull it several times on a work surface dusted with chickpea flour until it has a firm structure. Place the dough into an oblong roasting pan.

  4. Heat oil in a pan and fry the roast all over. Press the roast together on the sides with spatulas. When the roast is nice and golden brown all over, deglaze with 1.5 tablespoons of soy sauce, remove it from the pan, let it cool slightly and secure a few sprigs of thyme and rosemary around it with roasting twine.

  5. Pour the vegetable stock into a casserole dish to cover the bottom, place the roast in it, add the bay leaf and additional sprigs of rosemary and thyme and pour a little stock over the roast.

  6. Let the roast cook in a preheated oven at 210 degrees top/bottom heat (200° fan oven) for around 40-45 minutes. Brush or pour broth over it again and again.

  7. Then serve the roast with your favorite side dishes and dark, vegan gravy.
