Grill eggplant tastes incredibly delicious. The mild vegetables can be spiced up wonderfully with a marinade of your choice and is therefore a great side dish or a delicious veggie alternative to meat. If we grill vegetarian, this recipe is always used. Important: if you want to grill your eggplant, you should take these 3 tips to prepare:
- Cut the eggplant into 1-2 cm thick slices. Whether lengthways or transverse is a matter of taste. It is only important that the windows are not cut too thin because they can then burn faster on the grill.
- Sold eggplant slices and let it steep for 20 minutes. The salt removes bitter substances and makes the vegetables softer. This later ensures a particularly delicious grill result.
- Marine the vegetables. As a result, a lot of spice and taste comes to the eggplant.
Grilled eggplants tasted even better with this marinade
In order to give my eggplant from the grill a lot of spice, I mix them with my simple 4-ingredient marinade beforehand. The base forms olive oil, which I mix with fresh garlic, fresh parsley and some pepper. Here you can calmly use aromas because the aubergine itself is very mild in taste. So you will also be the hit on your homemade antipasti plate.
And don’t worry because the eggplant slices are only on the rust for a few minutes, there is no risk that the herbs burn. This always works with my grilled zucchini slices. Another little tip at the end: Aubergines suck up a lot of oil,, therefore do not use too much marinade. Otherwise it can happen that the windows become mushy.

The eggplant slices can be grilled very quickly. Already for 2-3 minutes per side is sufficient. The cooking time can of course vary a little, depending on how thick or thin your slices are. How do you recognize that you are finished?
