Sweet fried eggs out of Yeast dough with Creamy quark and Apricots are not only a delicious treat for Easter, but also a nice surprise for breakfast, brunch or as a snack in between.
My sweet fried eggs are easy to prepare and incredibly delicious. As an eye-catcher, the fried egg-shaped pastries are a tempting treat, especially as an Easter dessert. They delight children as well as the entire family and friends.

Prepare yeast dough: This is how it works with yeast activation
Prepare the yeast dough by heating 100 ml of milk to around 37 to 40 degrees. Then stir in a teaspoon of sugar and sprinkle the dry yeast over the warm milk. Mix everything with a whisk until the yeast is completely dissolved.
It’s best to cover the bowl with a cloth and let the whole thing stand for about 5 to 10 minutes. If bubbles form, it is a good sign that the yeast culture is alive and ready to be used.
Alternatively, you can skip this step and add the dry yeast directly to the other ingredients as directed on the package instructions.
Warm the rest of the milk together with the butter. Then put all the other ingredients in a bowl and knead everything together into a smooth dough. The quickest and easiest way to do this is to use a food processor. Then you have a finished yeast dough in just five minutes.
It takes twice as long with your hands. If the yeast dough can be removed from the edge and no longer sticks, then it is finished kneading. Let the yeast dough rest covered in a warm place for 1 to 2 hours.
Now in winter it works very well on the warm windowsill above the heater. Otherwise, I like to put it in the oven. The yeast dough should then have doubled in size. After this rest period, knead it again briefly – but not too vigorously.
Cutting out sweet fried eggs: It’s that easy!
Roll out the yeast dough using a rolling pin or rolling pin to approx. 1 cm thick. Then cut out circles with a Becker or a large glass. My glass has an inner diameter of 8 cm. I can handle the size well for baking the sweet fried eggs.
Place baking paper on a baking sheet. Stretch the cut out dough circles a little long or roll them out a little with a rolling pin so that they have a shape similar to fried eggs. Make another depression in the dough to make a little more space for the curd cream. You can use your fingers or a small glass to do this.
Let the dough pieces rest again for about 10 to 15 minutes. In the meantime, you can preheat the oven to 175 degrees top/bottom heat.
Fried eggs with a difference: prepare quark cream as a topping
Mix an egg, sugar, pudding powder, three tablespoons of milk and curd in a bowl to form a creamy mixture. You are welcome to add some organic lemon zest. Then simply use a tablespoon less milk.
Meanwhile, drain the apricots in a colander.
Garnish sweet fried eggs with quark and apricot halves
Whisk an egg yolk with a tablespoon of milk using a fork. Brush the dough with it; You can leave out the area where the curd mass will later go.
Now spread a tablespoon of the quark cream as egg white on each yeast dough piece and carefully place an apricot half on top as egg yolk.
Bake the sweet fried eggs in the oven!
Bake the sweet fried eggs in the oven for about 15 to 20 minutes until they have taken on a light color. In our oven, 15 to 17 minutes are enough. We don’t like them that dark either. Better light and fluffy.

For the yeast dough
- 1 Pk. Dry yeast (or 1/2 cube of fresh yeast)
- 250 ml milk
- 65 G Sugar
- 500 G Flour
- 1 prize Salt
- 1 Pk vanilla sugar
- 90 G butter
- 1 pcs. egg yolk
For covering
- 1 pcs. egg
- 50 G Sugar
- 3 EL milk
- 1 Pk. vanilla pudding
- 300 G Quark
- Optional Zest of a lemon
- 1 can half apricots (410 g is usually enough)
Prepare yeast dough
- Heat 100 ml of milk to around 37 to 40 degrees. Then stir in 1 teaspoon sugar. Then sprinkle the dry yeast over the warm milk and stir with a whisk until everything is dissolved.
- Now wait about 5 to 10 minutes. I cover the whole thing with a cloth. If bubbles form, it’s a good sign. The yeast is active and can be used.
- You can also omit this step and add the dry yeast directly to the ingredients as stated in the package instructions.
- Heat the remaining milk together with the butter. Then put all the other ingredients: flour, egg yolk, remaining sugar, pinch of salt, vanilla sugar and the dissolved yeast in a bowl.
- Knead everything into a smooth dough. This works best with a food processor, as the dough is ready within 5 minutes. It takes twice as long to do it by hand. The yeast dough is perfect when it comes away from the edge of the bowl and is no longer sticky.
- Let the yeast dough rest, covered, in a warm place for 1 to 2 hours. It should have doubled in size. After the rising time, knead again briefly, but not too vigorously.
Cut out fried eggs
- Roll out the dough with a rolling pin to about 1 cm thick. Using a cup or large glass, cut out circles and place them on baking sheets lined with baking paper. Mine has an inner diameter of 8cm.
- Stretch the circles a little longer or roll them out with a rolling pin to give them a fried egg shape. Then make a small depression for the curd cream. Let the dough pieces rest for another 10 to 15 minutes.
Prepare quark cream for sweet fried eggs
- For the quark cream, mix an egg, sugar, pudding powder, 3 tablespoons of milk and the quark in a bowl. What also tastes good when a little lemon zest is added to the quark mixture. However, my children don’t like it that much yet and so I often leave it out.
- In the meantime, drain the apricots in a sieve.
Egg yolk for brushing
- Beat 1 egg yolk with 1 tablespoon of milk with a fork.
- Brush the dough with a brush. You can leave out the place where the quark mixture goes.
