Christmas is in a week. How quickly did that happen again? And I’m still not really in the Christmas spirit after my 2.5 weeks in Hawaii, from which I only returned on December 14th. That’s never happened to me before. Normally I’m already in my wonderland in October listening to Christmas music and throwing around the appropriate decorations for the individual shoots. This year everything was different somehow. But I really enjoyed my time out in Hawaii. Because it’s actually always one of the most stressful times of the year – because it’s the high season for bloggers. Of course, I have already prepared one or two things for you in advance. And the last creation for Christmas is available today: a Christmas sponge roll with cinnamon stars and baked apples. Wow, it’s creamy, juicy and delicious. And I think it’s so pretty – without the thing being complicated to make. As always, here are all the facts at a glance:

Good to prepare: Christmas Swiss roll
I thought the Christmas Swiss roll was so good that I sent a picture straight to my mom with the idea of serving it on Christmas Eve. Mom agreed – so we’re having it for Christmas. And I’m already looking forward to it. 🙂 I admit, she reads the recipe longer than usual here, but actually every step is quick and easy. The sponge cake practically stirs itself in the food processor and is only baked for 10-12 minutes. For the filling, whip the cream until stiff, mix the other ingredients separately and finally fold in the cream. This is done in less than 5 minutes. To make the baked apples, you fry them (preferably with the peel on) in a pan – with a generous portion of cinnamon, of course. This only takes a few minutes. Then all you have to do is fill the Christmas roll: first the sponge cake base is spread with jam, then cinnamon stars are crumbled over it, spread with the cream, the baked apple is distributed and sprinkled again with cinnamon stars. Roll up, decorate as desired and chill. Complete. You can also make the roll yourself the day before and then simply decorate it fresh. That’s how I’ll do it too. And of course there are no limits when it comes to decoration. You can have a wonderful time there. If you like, you can also use other cookies instead of the cinnamon stars. For example vanilla crescents or speculoos. I’m sure it will taste wonderful too. What would be your choice? Recipe: healthier Christmas Swiss roll
This Christmas Swiss roll with cinnamon stars and baked apples is festive, healthier and easy to make. Super creamy and juicy, easy to prepare. Perfect for your Christmas 🙂

Cinnamon stars + for decoration
- Line a baking tray with baking paper. Preheat the oven to 200°C top/bottom heat.

For the sponge cake, mix flour with cornstarch, baking powder and cinnamon. Put aside. Beat the eggs with a pinch of salt for around 10 minutes at the highest level until thick and light – allow the erythritol/sugar to incorporate.
- Sift the flour mixture over it and fold in carefully. Pour the dough onto the prepared baking sheet and spread it carefully. Bake in a hot oven for 10 – 12 minutes.
- Meanwhile, lay out a tea towel and sprinkle with a little sugar. Remove the sponge cake from the oven and immediately turn it out onto the tea towel sprinkled with sugar. Moisten the baking paper slightly (works well with a brush) and carefully remove it. Roll up the sponge cake lengthways using the tea towel and let it cool.
- Baked apples: Peel, quarter, core and cut apples into small pieces. Heat some oil in a pan and fry the apples with sugar and cinnamon for around 4 minutes. They shouldn’t be too soft. Transfer and let cool.

Filling: Beat the cream until stiff. Mix the low-fat quark, sugar, cinnamon and vanilla extract with the beaters of the hand mixer. Stir in gelatine too. Fold in the cream. Remove 2/3 of the mass.

Roll up the Swiss roll and spread with jam. Sprinkle cinnamon stars on top. Then spread the filling over it, spread the baked apples over it, then a few more cinnamon stars and carefully roll up the whole thing.

Put the rest of the cream in a piping bag with a large perforated nozzle and decorate the roll as desired. Decorate as desired. Refrigerate until serving.
- The Swiss roll can also be baked and filled a day earlier. Simply store in the refrigerator overnight. It will then be decorated the next day.
