No burger without a really delicious burger sauce! In the best case scenario, it is creamy like a good vegan mayonnaise, spicy like a cocktail sauce and still doesn’t contain a lot of fat or even sugar. That’s exactly what most vegan ready-made mayos contain: fat, sugar and flavor enhancers. It is super easy to make a “slim” burger sauce with just a few healthy ingredients that is in no way inferior to the original Big Mac.
Instead of using oil or a vegan ready-made mayo, I simply use unsweetened soy yogurt as the base for the creamy burger sauce. That might sound unusual at first, but with the right combination of ingredients and a few spices, it becomes just as tasty as its high-calorie counterpart, which you can now even buy vegan in the supermarket. You will love this sauce! If you dilute it with water, it is also a great dressing for salads and bowls and delicious for dipping vegetables.
Three steps – ten minutes and your sauce is ready. So let’s get started!
Ingredients (4 servings)
- 30-40 g pickles
- 100 g unsweetened soy yogurt
- 1 tsp hot mustard
- 2 tsp tomato paste
- 1 tbsp cucumber brine (pickling water from sour cucumbers)
- 1 teaspoon oregano/or herbs de Provence, grated
- 1 tbsp yeast flakes
- Lemon juice and salt to taste
Preparation (10 minutes)

Finely chop pickled cucumbers.

Mix together the chopped cucumbers, soy yogurt, hot mustard, tomato paste, cucumber brine, oregano and nutritional yeast.

Season the sauce with salt and lemon juice.

Tips:
- If necessary, you can thicken the consistency of the sauce with a little plant-based drink (e.g. soy or oat drink).
- When more diluted, the sauce makes a great salad dressing
- If you like, you can also add 2 teaspoons of finely chopped capers
- If you add 1/2 teaspoon sherry to the sauce, it will taste like a cocktail sauce
