The ideal recipe for hobby bakers without much experience
The perfect strawberry basil cake
Layered cakes often seem a little intimidating to home bakers. As the name suggests, they are made up of multiple layers that need to be perfectly aligned and symmetrical. Otherwise, your cake may tip over or simply fall apart. All of the ingredients must also be at the perfect temperature. Otherwise the dough will not rise or the cream will not become fluffy and frothy.
Layered cakes don’t have to be that scary, and you don’t have to be a pro to make one! The following recipe is a perfect example of a cake that doesn’t require much skill but produces amazing results every time. Guests at the event may even find it hard to believe that they didn’t just order the cake from the local pastry shop.

Strawberries and basil are both super healthy and incredibly delicious too
A delicious dessert with an Italian touch
Such a cake is quite suitable even for weddings
For this strawberry basil cake you need the following ingredients:
For the cake bases:
- 100 g all-purpose flour, sifted + 1 tsp baking powder + pinch of salt
- 100 grams of granulated sugar
- 4 medium eggs, separated, at room temperature
- 50 ml extra virgin olive oil
- 20 fresh basil leaves, washed and finely chopped
For the cream:
- 200 g whipped cream, cold
- 200 g mascarpone, cold
- 50 g powdered sugar
- 50 g strawberries, pureed
- 500 g strawberries, cut into slices
- 5 fresh basil leaves, washed and finely chopped
Step by step recipe instructions:
To start, blend the olive oil and basil with an immersion blender until the oil turns a nice green, about 5 minutes, then set aside. Line an 18 cm springform pan with baking paper and set aside.
In a large bowl, beat the egg whites with a hand mixer. Gradually add the sugar while stirring constantly. Continue beating until the egg whites form stiff peaks. In a small bowl, beat the egg yolks, add to the egg whites and mix in. Gently fold in the flour with a spatula, then add the basil oil at the end.
Pour into the prepared springform pan, smooth out and bake in a preheated oven at 175 degrees for about 10-13 minutes. Do a toothpick test to ensure the center is cooked through. Allow to cool completely, then carefully remove from the mold and cut in half horizontally.
Be careful not to over-stir the whipped cream
Otherwise it immediately loses air and volume
In the meantime prepare the cream. To do this, beat the whipped cream and icing sugar in a large bowl with a hand mixer until fluffy. Fold in the mascarpone, strawberries and basil and beat until stiff.
Now take a cake base and place it in the middle of a pretty cake stand. Spread with cream, then arrange a few strawberry slices on top. Place the second cake layer on top, spread with cream and arrange strawberry slices. Spread the rest of the cream evenly on the outside. Decorate as desired, then chill in the fridge for 20-30 minutes. Cut and enjoy!
