- 100 grams of granulated sugar
- 4 medium eggs, separated, at room temperature
- 50 ml extra virgin olive oil
- 20 fresh basil leaves, washed and finely chopped
For the cream:
- 200 g whipped cream, cold
- 200 g mascarpone, cold
- 50 g powdered sugar
- 50 g strawberries, pureed
- 500 g strawberries, cut into slices
- 5 fresh basil leaves, washed and finely chopped
Step by step recipe instructions:
To start, blend the olive oil and basil with an immersion blender until the oil turns a nice green, about 5 minutes, then set aside. Line an 18 cm springform pan with baking paper and set aside.
In a large bowl, beat the egg whites with a hand mixer. Gradually add the sugar while stirring constantly. Continue beating until the egg whites form stiff peaks. In a small bowl, beat the egg yolks, add to the egg whites and mix in. Gently fold in the flour with a spatula, then add the basil oil at the end.
Pour into the prepared springform pan, smooth out and bake in a preheated oven at 175 degrees for about 10-13 minutes. Do a toothpick test to ensure the center is cooked through. Allow to cool completely, then carefully remove from the mold and cut in half horizontally.
